From Amish Egg Casserole to shrimp and grits and cinnamon rolls!

Amish Egg Casserole

1 lb bacon, diced

1 sweet onions, chopped

4 cups frozen shredded hashbrowns

9 large eggs, lightly beaten

2 cups shredded cheddar cheese

1 and 1/2 cups small curd cottage cheese

1 and 1/4 cups shredded swiss cheese

 

Preheat oven to 350 degrees. Grease 9×13 pan. Heat a large skillet over medium-high heat. Cook and stir bacon and onion until bacon is evenly browned, about 10 minutes. Drain, transfer bacon and onion to large bowl. Stir in potatoes, eggs and cheeses. Pour mixture into prepared baking dish. Bake in pre-heated oven until eggs are set and cheese is melted. About 45-50 minutes. Let stand for 10 minutes before serving.
