The next time you cut into a watermelon, you might want to save the rind because it apparently has a wide range of health benefits.
A registered dietitian says “believe it or not, you actually can and should eat watermelon rind.” The white part of the rind is a good source of fiber which helps aid in digestion. Plus, since the rinds are lower in sugar and higher in fiber than the actual melon, it’s also great for slowing down sugar absorption in the gut and in turn preventing blood sugar spikes.
A couple of different ways to consume them are shredding on top of a salad, or adding them to a smoothie with other fruits.
