The average price of one dozen large grade a eggs reached $4.82 last month. Here’s what you can use instead of paying the high prices. When it comes to baking, use flax meal as an alternative. Mixing together one tablespoon of flax meal with 2.5 tablespoons of water is equivalent to one egg. But, be sure to let the mixture rest and thicken for about five minutes before adding it to a recipe. Other successful replacements include ground chia seeds, arrowroot powder, unsweetened apple sauce and bananas. Protein powders can be used as well and believe it or not, so can tofu! A registered dietitian from North Carolina says simply crumble tofu into a warm pan like you would your scrambled eggs, and add seasonings. One egg equals about a quarter cup of puréed tofu.
