Bloody Mary Gazpacho with Shrimp
8 plum tomatoes, roughly chopped into 1-inch pieces
3 red bell peppers, cored, seeded and roughly chopped into 1-inch pieces
2 hothouse cucumbers, unpeeled, halved, chopped and seeded
2 medium red onions, roughly chopped into 1-inch pieces
46 oz tomato juice
1/2 cup olive oil
1/2 cup white wine vinegar
6 cloves garlic, minced
Salt and Pepper to taste
Fresh basil or sprig for garnish
In a food processor fit with steel blade, pulse vegetables until roughly chopped. Combine veggies in large bowl. Stir in olive oil, vinegar, tomato juice and add garlic. Season to taste and chill. Add garnish before serving.
In a deep serving dish, layer cool whip. Cover whip with ice cream sandwiches. Then cover sandwiches with either coffee or chocolate ice cream. Top with more cool whip. Freeze for awhile before serving. Optional: decorate top with nuts, chocolate…etc.
