Waldorf Salad
2 Granny Smith Apples
2 Gala Apples
Cut in cubes
Place in ice bath with lemon juice
1 cup diced Celery
1 cup Grapes cut in half dry apples and combine with Grapes and celery
1/2 cup whipping Cream Whipped &
1/4 cup Mayo
1/2 tsp Kosher Salt.  Combine all ingredients and chill.
Microwave Caramel
1/4 cup Butter
1/2 cup Corn Syrup
1/2 cup Sugar
1/2 cup Brown Sugar
1/2 cup Sweetened Condensed Milk
1/4 tsp Salt
Butter an 8 × 8 dish…set aside.
Stir ingredients together in large microwave  bowl and microwave 6 to 7 minutes stirring every 90 seconds. Add 1 tsp. Vanilla. Stir and pour into buttered dish.
Apple Crisp
2 12 cups apples, peeled, cored and sliced
1 cup sifted all-purpose flour
1 cup white sugar
1/2 tsp cinnamon
1/4 tsp salt
1/2 cup butter, softened
Preheat over to 350. Lightly grease 8in square pan dish. Arrange apple slices evenly in dish. Sift flour, sugar, cinnamonand salt in a bowl. Cut in butter using a pastry blender or 2 knives, until mixture resembles coarse cornmeal. Spril over the apples. Bake until topping is golden brown about 40 to 45 minutes. Cool before serving.
Butternut Squash and Apple Soup 
5 Tbsp unsalted butter
6 cups 1/2 inch cubes of butternut squash
2 cups chopped leeks, white and light green parts only
1/2 cup chopped carrots
1/2 cup chopped celery
2 small granny smith apples, cored and diced
1 1/2 tsp dried thyme
1/2 tsp dried sage
5 cups chicken stock
1 cup apple cider
Salt to taste
5 slices cooked bacon, crumbled (optional)
Melt butter in large pot over medium-high heat. Saute squash, leeks, carrots, celery until softened. About 10 to 12 mintues. Stir apples, thyme and sage into vegetable mixture. Pour in stock and cider. Bring to a simmer , reduce heat to low and cover pot with lid. Cook until begetables and apples are tender, about 30 minutes. Remove from heat to cool.
Pour soup in blender, pulse a few times to leave soup chunf or puree. Return soup to pot and add salt to taste. Add bacon crumbles to soup served in bowls.
