Patti Hilton of Barefoot Bistro never disappoints! Today she brought in multiple items that are perfect for summer BBQ’s, brunches or beach days! They all feature pineapple!

Pina Colada Dip
1 1/4 cups Milk
3/4 cup Pineapple Yogurt
1 pkg (3.4oz) instant Coconut Cream Pudding mix
1 (8 oz) Cool Whip
Whisk everything except Cool Whip for 2 minutes. Fold in Cool Whip. Refrigerate 2 hours. Serve with fruit.
Pineapple Casserole
1/3 cup Sugar
1/3 cup Brown Sugar
6 TBSP Flour
3 cups Cheddar, shredded
2 cans Pineapple chunks (20 oz each) drained, save the juice
6 TBSP Pineapple juice
1 1/2 cups Ritz Cracker crumbs
8 TBSP Butter, melted
1 TBSP Butter to grease pan
350 degrees
Grease a baking dish with 1 TBSP Butter.
Mix Sugar, Brown Sugar, Flour. Stir in 2 cups Cheddar Cheese.
Add Pineapple chunks, reserved juice and stir. Pour into casserole dish. Top with remaining Cheddar (1 cup). Combine Cracker crumbs and 8 TBSP Butter in a separate bowl. Spread over casserole. Bake 25 – 30 minutes.
