Spring into the season with Barefoot Bistro. Patti Hilton shares some of her recipes for sweet, guilt-free treats.
Peanut Butter Protein Balls
1/2 cup p-nut butter
1 cup steel-cut oats
1/4 cup honey
1/2 cup almonds
1/4 cup semi-sweet dark chocolate chips
1/4 cup shredded coconut (dried)
In a large bowl combine all ingredients. Place waxed paper on a sheet pan. Roll 2 TBSP into approximately 2 inch sized balls. Place on waxed paper. Continue until you have used all the dough.
Energy Bars
2 cups pitted dates (rough chop)
2 cups Pecans
1 cup almonds
3/4 cup cocoa powder
2 TBSP coconut oil (melted)
1/2 cup shredded coconut
2 tsp vanilla
1 TBSP cold espresso
1/2 tsp salt
1/2 pinch cayenne
Place ingredients in a food processor. Pulse on and off to start. Process about 1 minute.
Line a 2 qt baking dish with plastic wrap. Place mixture in dish and smooth with a spatula. Refrigerate until firm. Cut into bars. Serve and enjoy!
