Cannoli Cream Cake

Yellow Layer Cake: 

2/3 cup Butter, softened
1 and 3/4 cups Sugar
2 large Eggs
1 and 1/2 tsp Vanilla
2 and 1/2 cups Flour
2 and 1/2 tsp Baking Powder
1/2 tsp Salt
1 and 1/4 cups Milk
Cannoli Cream:
16 oz Ricotta Cheese, if it is wet drain in cheesecloth
8 oz Mascarpone Cheese
1 cup super fine Sugar, aka caster sugar
Zest of 1 Lemon
1 Tbsp Vanilla
1 cup mini Chocolate Chips
1. In mixer, cream together the butter and sugar until light and fluffy.
2. Add in eggs, one at a time and mix well after each.
3. Add vanilla.
4. In another bowl add flour, salt and baking powder. Blend.
5. Add 1/2 the flour mixture to wet mixture, alternating with the milk. Continue until all the ingredients have been added.
6. Divide the mixture into three floured 9″ cake pans and bake at 350 degrees for about 20 mins, or until toothpick comes out clean.
7. Allow cakes to cool completely before adding cannoli cream.
