Robin’s Spinach Casserole
1 10 oz. pkg. frozen chopped spinach or if using fresh judge amount, chop, cook Drain and squeeze spinach to remove water/liquid
1 can cream of mushroom soup
1/2 can of milk to rinse out soup can
1 egg beaten
1/4 cup finely chopped onion (more if desired)
1 Tbsp. butter or margarine cut into small pieces
1 3/4 c crumbled stuffing mix not cubed, Pepperidge Farm seasoned is great to use
1 c shredded Cheddar or Monterey Jack cheese, whatever you want to use
Cook drain squeeze spinach set aside. In mixing bowl add milk, soup, egg, onion, butter, cheese mix well.
Add spinach and 1 cup of stuffing mix to milk/soup mixture, salt & pepper. Mix well and put in greased casserole dish. Top with remaining stuffing to cover and dot with butter.
Bake at 350 for approximately 30 -45 minutes or until bubbling in center.
Skillet Chicken Thighs with White Wine Butter Sauce
4 skin-on, bone-in chicken thighs (about 2 pounds)
Kosher salt and coarsely ground black pepper
1/3 cup champagne vinegar
1/3 cup dry white wine
2 shallots, finely chopped
1/2 lemon, juiced
2 bay leaves
1/2 cup heavy cream
1/2 pound (2 sticks) unsalted butter, cubed
1/4 cup chopped chives
