Cheesy and Sweet – Recipes for Both from the Barefoot Bistro!

Parmesan Ranch Snack Mix
 
9 cups Corn, Wheat
either/or Rice Chex
2 Cups miniature  Pretzels
2 Cups Goldfish
1/2 Cup melted Butter
1/2 Cup grated Parmesan
1 TBSP Dry Ranch
In a large bowl combine cereal, pretzels & crackers. Drizzle with butter. Sprinkle with cheese and Ranch. Toss to coat.
Microwave in batches on hi for 3 minutes, stirring every minute. Spread on a baking sheet to cool. Store in airtight container.
Swiss Cheese Appetizer Cake
 
1 1/2 crushed Ritz Crackers (about 36)
3 TBSP Butter, melted
3 – 8 Oz pkg Cream Cheese, softened
1/4 cup Whipping Cream
1 TBSP oil from sun-dried Tomatoes
3 Eggs, lightly beaten
6 Oz Swiss Cheese, shredded
1/2 cup oil-packed sun-dried tomatoes, patted dry & thinly sliced
3 green onions, chopped
Crackers
Preheat oven to 375 degrees.  In small bowl combine cracker crumbs & butter. Press into bottom of 9 inch springform pan. Bake about 10 minutes. Until golden. Cool on wire rack. Reduce oven to 325 degrees.
In large bowl, beat cream cheese til smooth. Add oil. Next beat in eggs until just blended. Fold in cheese, tomatoes & onions.pour over crust. Return pan to baking sheet.
Bake until center is almost set, 35 – 40 minutes. Cool on wire rack 10 minutes. Loosen sides from pan with a knife. Cool 1 hour longer. Refrigerate overnight. Cover when cooled.
Crescent S’mores
 
1 – 8 count pkg Crescent Roll dough
1 1/2 cups Chocolate  Chips, divided
1 cup mini marshmallows
1/4 cup Graham Cracker Crumbs
Preheat oven to 375 degrees. Line baking sheet with parchment  paper.
Unroll dough and separate.
Sprinkle chips and marshmallows on triangles and roll each up as usual.
Bake 10 minutes or until light golden brown.
Cool 5 minutes then transfer to wire rack.
Place remaining 1/2 cup of chocolate chips in microwave  and heat in 30 second increments until melted and smooth. Spoon into piping bag and drizzle over rolls. Sprinkle with Graham cracker crumbs.
Mozzarella Cheese Balls
 
12 Oz Mozzarella, shredded
1 Egg
3 TBSP Cornstarch
Mix together.  Form small balls and deep fry.
