Patti Hilton Brings a Brunch Spread That’s Perfect for the Weekend!

1 tbsp Butter
1 small Onion, thinly sliced
Salt and Pepper
4 Oz Bacon cut in 1/2″ pieces
2 tsp fresh Thyme
1/2 cup shredded Gruyere
1 cup Cream
2 Eggs
Combine Butter, Onion, 1/2 tsp Salt & 1/2 cup water in skillet over med-low heat. Cook, stirring occasionally,  until  onions are completely softened and all water has evaporated, about 30 minutes. Cook Bacon in a separate pan til crisp. Add Bacon to cooked onions and stir in 1 tsp Thyme, and 1/2 tsp Pepper. Spread onion mixture  in bottom of prepared pie crust. Sprinkle with Gruyere. Whisk Eggs, Cream & 1/2 tsp Salt and pour over filling. Top with 1 tsp Thyme. Bake 30 minutes til golden. Cool 30 minutes  before serving.
