Marinated Mushrooms and Taquitos from Barefoot Bistro

For National Mushroom Day, Patti Hilton of Barefoot Bistro, makes marinated mushrooms and mushroom taquitos!
Marinated Mushrooms
4 TBSP Olive Oil
1 TBSP Balsamic or Red or White Vinegar
3 cloves Garlic, minced
1/2 tsp Thyme
1 TBSP Parsley
1/4 tsp Salt
1/4 tsp Pepper
Pinch of Red Chili Flakes
Combine all ingredients.
Add 2 lbs. Sliced Mushrooms. Refrigerate.
Mushroom & Cream Cheese Taquitos
2 TBSP Olive Oil
8 oz Mushrooms finely chopped
1 tsp Oregano
1 tsp dried Thyme
1/2 tsp Red Pepper Flakes
1/4 tsp Salt
8 oz Cream Cheese
4 oz Ricotta Cheese
10 Flour Tortillas (8 in)
Oil for frying
Sauté Mushrooms in Olive Oil 4 minutes. Add Oregano, Thyme, Red Pepper Flakes & Salt. Sauté till Mushrooms are browned 4-6 minutes. Combine cheeses in a bowl. Fold in cooled Mushrooms. Spread 3 TBSP of mixture on the bottom half of the tortilla. Roll up tightly. Secure with toothpicks. Fry 2-4 minutes. Drain on paper towel. Discard toothpicks.
