Gluten-Free Yogurt Parfaits on Carolina AM

Tori Adams, a WFXB producer, shows Audra how to make a yogurt parfait that is gluten-free and vegan.  After Adams was diagnosed with celiac disease, she learned how to transform her diet.  She enjoys making many of her own dishes for the peace of mind knowing the ingredients and because it is often much healthier!
Gluten-free granola 
This recipe has only 4 ingredients and is not only gluten free but also vegan!
– 1 1/2 cups nuts roughly chopped used almond, pecan, peanut mix from planters
– 1 cup gluten free rolled oats
– 1/2 cup almond flour
– 1/4 cup pure maple syrup
(salt & cinnamon are optional)
Preheat over to 325.  Place parchment paper on a baking sheet.   Mix ingredients in bowl until clusters are formed. Spread out on baking sheet.   Bake for 20 minutes.  Flip with a spatula, then bake 5 to 10 more minutes.   Cool and store in an airtight container. Lasts up to 2 months.
