Candy Bacon for Valentine’s Day with Barefoot Bistro

Bacon Candy
Preheat oven to 375 degrees.
Line a baking sheet with foil.
Place wire racks on baking sheet. Place bacon strips on rack and cover each with brown sugar. You may add black pepper if you like. Bake 20 – 25 minutes. Start checking at 18 minutes because bacon cooks differently based on fat content. Remove with tongs to parchment paper or it will stick to the rack. Let cool.
Dill Sauce
1/3 cup sour cream
1/3 cup mayo
1TBSP chopped onion
1 tsp. lemon juice
1 tsp. horseradish
1/4 tsp dill weed
1/4 tsp garlic salt
pepper to taste
French onion soup
Onions-sliced 1/4″ thick
Olive oil-1/4 cup plus 1 TBSP
In a dutch oven cook covered on low for 15 minutes.  Remove lid and cook 30 minutes on low.
Then add:
2 TBSP (1oz) butter
1/2 tsp. nutmeg
4 sprigs thyume
1 bay leaf
2 garlic cloves thinly sliced
1 TBSP salt
1/2 tsp fresh pepper
Cook 10 minutes
Add 3/4 cup sav blanc wine.  Turn up heat and cook 3-5 minutes.
Add:
6 cups beef stock
Simmer 45 minutes.  Remove thyme and bay leaf.  Add 1/4 cup cognac.  Top with bread and cheese.  Broil 3-4 minutes and garnish with parsley.
