Midday Cooking: Feta Apple Salad

What You’ll Need: 3 cups of Mixed Greens 1 one space½ cups Sliced Grilled Chicken (optional) 1 Granny Smith Apple cored and chopped 3 Tbs. Dried Cranberries 3 oz. Feta Cheese one space¼ Cup Toasted Walnuts or pecans – I used chopped honey roasted pecans Olive Shoppe Rosemary Infused Olive Oil Olive Shoppe Ripened Red Apple Balsamic Directions: Coat chicken breasts with Rosemary Infused Olive Oil. Refrigerate and marinate for a couple of hours. Once done, cook chicken on grill until done. Let cool and slice. In a bowl, add mixed greens, chopped apple, dried cranberries, feta cheese and toasted walnuts or pecans. Lightly drizzle salad with Rosemary Infused Olive Oil and the Ripened Red Apple Balsamic. Toss and serve.
