Patti Hilton of Barefoot Bistro Gets Us in the St. Patrick’s Day Spirit with Some Irish Recipes

Irish Mustard
1/2 cup Dijon Mustard
2 Tbsp Honey Mustard
2 Tbsp Guinness
1 tsp Dark Brown Sugar
Mix well!
Homemade Irish Cream
1 can Sweentened Condensed Milk
1 cup Heavy Cream
1 cup Irish Whiskey
2 Tbsp Chocolate Syrup
1 and 1/2 tsp instant coffee
1 tsp Vanilla Extract
1 tsp Almond Extract
Add all ingredients to a blender and mix until smooth. Pour over ice cream, sip on the rocks or add a splash to your coffee!
Irish Soda Bread Muffins
In a large bowl mix:
1 and 1/4 cups Whole Wheat Flour
1 cup All purpose Flour
1/2 cup Sugar
2 tsp Baking Powder
1/4 tsp Salt
1 tsp Caraway Seeds
In a separate bowl mix:
1 Egg
1 cup plus Tbsp Milk
1/4 cup Butter
1/4 cup Plain Yogurt
Set oven to 400 degrees. Make a well in the center of dry ingredients and add wet ingrendients. Stir and fold in about 3/4 cup Raisins.
Sprsy muffin pan with non-stick spray and fill 3/4 full. Sprinkle with Sugar and backe 13 to 15 minutes.
