Barefoot Bistro Helps Celebrate Cheese Doodle Day
Cheese Doodle Chicken Meatballs
2 lbs ground Chicken
1 lb Bacon, cooked & crumbled
1/2 cup Scallion, chopped
1/2 cup Bread Crumbs
1 Egg, beaten
2 tsp Garlic Powder
2 tsp Salt
1/2 tsp Black Pepper
1 TBSP Worcestershire
6 oz Velveeta cut into 1/2 ” cubes
Breading:
1 bag Cheese Doodles crushed
3 Eggs, beaten
1 cup Flour
Preheat oven at 400 degrees.
Add all ingredients except Velveeta cubes and mix well. Form into 2″ balls. Stick finger halfway in to create a hole for the cheese cube. Shape meat around until cheese is hidden inside.
Dip each meatball into eggs, flour then into crushed Cheese Doodles.
Bake on sprayed baking sheet 18-20 minutes.
Hot and Spicy Date Cookies
1 cup shredded Cheddar Cheese
6 oz Butter
2 cups Flour
1/2 tsp Salt
Dash of Cayenne
2 lbs pitted Dates
Preheat oven to 450 degrees.
Combine Cheese and Butter. Then add Flour, Salt, Cayenne to make a soft dough. Roll into a ball. Press a Date in the center of each. Bake 15 minutes.
Do not overcook. Once cooled roll in Confectioners Sugar.
