Greater Potato Soup with Patti Hilton of Barefoot Bistro

In a dutch oven:

1/4 cup Bacon Grease

2 Stalks Celery, Chopped

1 Onion, Diced

3 Cloves Garlic

Saute for 1 to 2 minutes.

Add in 8 potatoes cubed and continue to saute for 2 to 4 minutes.

4 cups Stock

Salt and Pepper

 

In a separate pot:

Mix 3 Tbsp Butter

1/4 cup flour

1 cup Cream

1 to 2 cups Velveeta

 

Then add to soup!
