Barefoot Bistro: Homemade Candy and Watermelon Sorbet
Homemade Gummy Candy
3 oz flavored Gelatin
1 and 1/4 envelope unflavored Gelatin
1/3 cup cold water
*Optional: for sour candy add 1/4 to 1/2 tsp citric acid
Coat gelatin mold lightly with oil. In a small bowl combine both gelatins and the cold water. Let the ingredients sit for 10 minutes. Microwave 30 seconds and stir well. Microwave another 30 seconds and stir again. The sugar should be dissolved. If not, microwave another 10 to 15 seconds until the sugar and gelatin are completely dissolved. Pour into molds and refrigerate for 20 minutes. Remove from molds. Store in refrigerator or at room temperature for several weeks.
Watermelon Sorbet
1 cup Sugar
1/2 cup Water
1/4 cup Lemon Juice
Cook until sugar is dissolved then chill. Puree 3 cups watermelon and combine all ingredients. Then freeze in metal pan, stirring every 30 minutes until frozen. Store in freezer in airtight container.
