Just Like Grandma’s Banana Bread

Makes 1 loaf

All-purpose flour 1 1/3 cups

Baking powder 2 teaspoons

Baking soda 1 teaspoon

Cinnamon 1/4 teaspoon

Cardamom 1/8 teaspoon

Nutmeg         1/8 teaspoon

Kosher salt 1/2 teaspoon

Sugar 1 1/4 cups

Eggs, large 2

Canola oil 1/3 cup

Water 1/3 cup

Vanilla extract 2 teaspoons

Bananas, ripe, mashed 2 medium size

  1. Preheat the oven to 350 degrees.
  1. In a small bowl, combine all the dry ingredients and whisk until combined.
  1. Add all the eggs, oil, water, and vanilla, and whisk gently until combined.
  1. Stir in mashed bananas. Mixing only until combined.  Do not over mix.
  1. Lightly grease an 8 1/2-inch baking loaf pan and pour the batter into it.
  1. Place in the center of the oven for about 55–60 minutes until a toothpick inserted into the middle comes clean.
  2. Allow to cool for about 30 minutes before flipping over and removing from the pan. Allow to cool completely on a rack if you have one; otherwise transfer to a cutting board to cool.

Chef’s Tip: The riper the bananas the better tasting banana bread. So if you have bananas that you are about to throw out, they will be perfect for banana bread.
