Carolina AM Recipe: Cranberry Oatmeal Pancakes
Oatmeal Cranberry Pancakes
yields: 12-16 cakes
Oats, old fashioned 1 c
AP Flour 1 c
Brown Sugar 1/2 c
Baking Powder 2 tsp
Baking Soda 1/2 tsp
Cinnamon 1 tsp
Nutmeg 1/4 tsp
Sour Cream 3/4 c
Milk 3/4 c
Eggs 2
Vanilla Extract 1 tsp
Banana, mashed 2 ea
Butter, unsalted, melted 2 oz
Butter, unsalted for cooking
Orange Cranberry Maple Syrup
Orange Juice 3/4 cup
Craisins 3/4 cup
Brown Sugar 1 Tbl + 1 1/2 tsp
Kosher Salt 1/4 tsp
Butter, unsalted 3 Tbl
Cinnamon pinch (optional)
Maple Syrup 3/4 cup
Vanilla Extract 1/2 tsp
- In a large bowl, whisk together all your dry ingredients.
- Then add the sour cream, milk and eggs, stir with a whisk.
- Fold in the melted butter and mashed bananas.
- Orange Cranberry Maple Syrup: In a small skillet pan, melt the butter, salt, cinnamon and brown sugar over a medium high heat. Once the butter starts to simmer , add the craisins and toss to coat with butter and sugar mixture, then add the orange juice. Allow the crasins to cook for about 5 minutes or until the liquid turns into more of a syrup, then carefully add the maple syrup. Bring the syrup up to a simmer, cook until the syrup thickens and coats the back of a spoon. Remove from heat and set aside at room temperature.
- In a large skillet pan or flat frying pan, over a medium high heat, melt a little butter and spread it around the pan. Pour 1/4 cup tablespoons of batter down on the pan, making sure to keep the cakes as round as possible and not to crowd the pan. You may only be able to cook 2 cakes at a time. Carefully flipping your cakes over and cooking for another 3-4 minutes. Check the center to make sure the cakes are done all the way through and serve with the Orange Cranberry Maple Syrup.
Chef’s Tips: The oatmeal batter and cranberry syrup can both be prepared the day before. Heat the cranberry syrup back to warm either in a microwave or in a pan over a low heat. Allow the oatmeal batter to rest at room temperature for about 20 minutes before cooking.
