Pina Colada Truffles
1 pkg Golden Oreos
1 8 Oz Cream Cheese
1/2 cup crushed pineapple
1 TBSP Coconut Rum
2 cups white Chocolate Chips
1 TBSP Coconut Oil
Toasted Shredded Coconut
In a food processor crush the cookies. Mix them with cream cheese, pineapple & rum. Roll into balls and freeze 30 minutes. Melt Chocolate & oil.Dip balls in Chocolate and roll in Coconut.
Guinness Beer Cheese Dip
32 Oz Velveeta cut into cubes
1 cup Guinness
1/2 cup Salsa
2 TBSP Worcestershire
1 tsp Chili Powder
1/2 tsp Onion Powder
1/4 tsp Cayenne
Heat Cheese til melted.
Stir in the rest of the ingredients and cook about 10 minutes. Serve with pretzels, sliced apple or tortilla chips.
Rum & Coke Cake
1 box Devil’s Food cake mix
1/2 cup Oil
3 Eggs
1 cup Coke
Topping
6 Oz Cream Cheese
6 TBSP Butter, softened
1 1/2 cup Powdered Sugar
3 3/4 cups Cream
3 TBSP Gold Rum
1 tsp Vanilla
Pinch Kosher Salt
Caramel
Make cake. Heat oven 350 degrees.
Grease 9″ X 13″ pan.
In large mixing bowl, whisk cake mix, oil, eggs til combined and smooth. Slowly whisk in Coke. Pour battery into pan. Bake 25 minutes. Cool completely and cut into 1″ cubes.
Meanwhile, make frosting. In large bowl using hand mixer, beat cream cheese, butter & sugar until light and fluffy. Add in cream, rum, vanilla & salt and beat until medium-stiff peaks form.
Place 4 cake cubes in the bottom of each glass. Top with a follow of rum whipped cream & drizzle with Caramel. Repeat until glass is full. Serve with a mini bottle pside-down in each glass.
