Rice Krispy Cheesecake and Layered Salad…a Birthday Girl’s Favorite from Barefoot Bistro

Layered Salad

Stack in order;
1 head of Iceberg Lettuce, torn into pieces
1 head cauliflower, cut into florets
1 purple onion, sliced thin
1/4 cup of sugar
1 lb. bacon cooked & crumbled
1 cup grated Parmesan cheese
Cover w/ 1 cup Hellman’s mayonnaise.  Let sit overnight.  Toss well and serve.
Spicy P-Nut Sauce
1/2 cup vegetable oil
1/4 cup Tahini, stirred
1/4 cup soy sauce
2 TBLS. dry sherry
2 TBLS. rice vinegar
1/2 teaspoon sesame oil
1/3 cup honey
1 TBLS. coarsely chopped garlic
1 TBLS. coarsely chopped ginger
1/2 cup crunchy regular p-nut butter (not old fashioned)
1 teaspoon dried red pepper flakes or to taste
1/4 cup water
Place all ingredients in blender in order given and blend until puréed.  Sauce can be served immediately or refrigerated.  Serve at room temperature.
Makes 2 1/2 cups.
Rice Krispy Cheesecake
FOR CRUST:
• 6 cups Rice Krispies cereal
• 1/4 cup salted butter
• 1 (10 oz pkg) miniature marshmallows
FOR FILLING:
• 1 (8 oz pkg) cream cheese, softened
• 1/2 cup sugar
• 1 tsp vanilla extract
• 1 (7 oz jar) marshmallow creme/fluff
• 1 (8 oz pkg) Cool Whip, thawed
FOR GARNISH:
• Whipped cream
• Cubed & prepared Rice Krispy Treat
