The Latest Way to Order Eggs…”Frambled”

If you ask someone how they want their eggs, and they say, “frambled”…they aren’t just mumbling because they haven’t had their coffee yet. It’s a mash-up of fried eggs and scrambled eggs and some claim it’s an improvement on both.

They’re fairly simple to make. You just crack the eggs directly into the pan…and use a spatula to gently break up the egg whites, moving it around the yolks. After a couple minutes, you can run the spatula through the yolks, and let the eggs set. That’s it. the idea is that they’re less annoying to make than fried eggs, but also less dry than scrambled eggs, with more “textural variation” and more of that yolky flavor, since it’s streaking through, rather than fully incorporated.
