Mexican Street Corn Salad:
4 ears Corn, grilled and cut off cob
4 TBSP Butter on Corn
1/2 Bell Pepper, finely chopped
Jalapeño, finely chopped
1/4 cup Cilantro
1/2 cup Cotija Cheese
Combine in a bowl.
Dressing:
3 TBSP Greek Yogurt
3 TBSP Mayo
1 Clove Garlic
1 Lime zested and juiced
1/2 tsp Chili Powder
Combine and dress salad.
Crab Stuffed Shrimp:
1 lb Can Lump Crab Meat
Lemon Juice
Handful of Parsley
1/2 cup Bread Crumbs
1/2 cup Mayo
1 Tbsp Old Bay
Tail on Shrimp opened cradle a spoonful of filling in center of Shrimp. Cook in butter. Finish with Parmesan, Parsley and Lemon Juice.
