St. Patrick’s Day Puppy Chow

5 cups Rice Chex
1 bag Green Candy Melts
1 drop of young living spearmint essential oil
2 cups Powdered Sugar
Add rice chex to large mixing bowl.  Set aside.
Pour candy melts into microwave safe bowl and microwave at 30 second intervals, stirring util melted. Stir in one drop of spearmint oil.
Add the powdered sugar to a Zip Lock bag.
Pour melted candy melts on rice chex and mix until they’re coated.
Pour candy melt covered chex into the Zip Lock of powdered sugar, close and shake until they’re covered.
Pour puppy chow onto large baking sheet and allow to cool. Store in airtight container for up to 5 days.

Irish Soda Bread Muffins

In a large bowl mix:

1 1/4 cups whole wheat flour

1 cup all-purpose flour

1/2 cup sugar

2 tsp. baking powder

1/4 tsp. baking soda

1/4 tsp. salt

1 tsp. caraway seeds

In a separate bowl whisk:

1 egg

1 cup plus 1 Tbsp. Milk

1/4 cup melted butter

1/4 cup plain yogurt

Make a well in center of dry ingredients and add wet ingredients.  Stir then fold in 3/4 cup Raisins. Set oven to Bake 400 degrees and spray muffin pan with nonstick. Fill 3/4 full and sprinkle with sugar. Bake 13 – 15 minutes.
