If a 10-day process type of bread (a.k.a. friendship breads) is not your speed, welcome to the club. If you like simple, you’re gonna dig this two-ingredient bread. There are several versions of two or three ingredient bread recipe you can find online. Some use egg whites, other use cottage cheese and protein powder. For this recipe, all you need is plain Greek yogurt and self-rising bread. You can use any yogurt but Greek yogurt tends to be thicker which you want for this recipe as it tenderizes the dough. Because of it’s acidity, yogurt relaxes the gluten making it more tender. Plus, you’re getting a nice dose of protein. The instructions say mix the two ingredients then knead the dough a few times until smooth. You can separate into parts and cook in a skillet or bake as a loaf at 350 degrees for about 25 minutes. By the way, the friendship bread was a bust on about day 5. Input from viewers and those who know about these kind of things say the yeast may have suffered in too hot or cold temperatures. We did transport the dough during the weekend, that could have disrupted the rise.
