Is Toasted or Untoasted Bread Healthier?

Technically toasted bread has a slightly lower glycemic index and it's easier to digest for some. 

There is a classic myth that toasting bread kills nutrients.  According to a registered dietician who posted about the issue, that is false.  The dietician claims toasted bread technically has a slightly lower glycemic index.  The heat creates chemical reactions that break down the carbs which also makes it easier to digest.  But be careful not to burn the bread!   Burnt bread can cause a potentially carcinogenic compound that’s not good for us.  If digestion is your issue, it’s reported that sprouted-grain bread breaks down grain starches, making them easier to digest.
