You’d be right! Today’s brussels sprouts are not the same ones served at your mom’s dinner table. Turns out scientists in the Netherlands tinkered with them in the 90s, making the sprouts less bitter. NPR reports that a Dutch scientist figured out exactly which chemical compounds in brussels sprouts made them bitter and found a way to eventually cross-pollinate the chemicals out.
