Chef George of Barefoot Bistro Brings Some New Flavor to Carolina AM!

Mushroom Bordelaise Sauce
1 cup Mushrooms
3/4 cup dry Red Wine
2 medium Shallots
1/4 tsp dried, ground Thyme
1 Bay Leaf
2 cups Beef Stock
Salt & Pepper to taste
Saute Shallots & Mushrooms in Wine. Combine all ingredients & bring to a boil. Reduce heat by 75% of original volume. Rest 5 minutes, then serve.
Stuffed Mushrooms
20 Button (med) Mushrooms. Pop out stem. Fill with choice of stuffing. Top with Butter (liquified) or Olive Oil. A splash of water, Seasoning Salt. Bake 8-10 minutes at 350 degrees. Top with Hollandaise Sauce.
