1. Pressing the patties while they cook . Doing that will cause the meat to loose juice and and cause flare ups. Lay off the spatula until it’s time to flip 2.pressing the seasoning into the meat.  Don’t do that, it makes them rubbery. Instead, pat burgers into patties.   Handling the meat as little as possible. then season the fully formed burger patties.  3. Patties that are too thick.  This will cause them to puff up on the grill and the topping will slide off.  Instead, make burgers 3/4 inch thick with a divot in the middle.  The dip ensures your burgers cook up flat.  4. Using a grill that’s not hot enough.  You don’t want them to steam.  To test your grill, listen for a sizzle.  5. Flipping the burgers too many times.  They will fall apart.  Instead, lift up one side to check for doneness and only flip once.  6. Adding cheese too early.   Add cheese two minutes before burger is finished cooking and cover the lid.
