Why don’t our banana-flavored candies taste like bananas? Well they do, but they just taste like your great-grandfather’s banana. The flavoring was developed based on a variety called the Gros Michel, or the Big Mike. That breed of bananas went extinct from a fungus that killed all of them in the 1950s. The new variety most of us find in the stores is called the Cavendish. There’s a noticeable difference.
