Fruit Cocktail Cake:

2 cups flour

2 cups sugar

2 eggs

1 1/2 tsp baking powder

1 1/2 tsp baking soda

1 tsp salt

1 can fruit cocktail

 

Filling:

1 can sweetened condensed milk

1/2 cup Baker’s Angel Flake Coconut

1 cup pecans

1 stick margarine

(Cook filling ingredients 10 minutes after cake is done, stirring often). Mix all dry ingredients. Add eggs, stir until flour is moist.Add fruit cocktail. Mix well by hand. Pour into greased and floured layer pans. (2 pans) Bake at 375 for 20 to 25 minutes. Remove from pans while warm. Let filling cool about 10 minutes and frost.


Fruit Delight

1 15oz can of pineapple chunks

1 15oz can mandarin oranges

16oz fresh strawberries

5 cups seedless red grapes

2 apples, cored

2 bananas

3.4oz instant lemon pudding mix

Drain pineapple and oranges, reserving the juice. Wash fresh fruits and dry. Slive apples and bananas. Combine pineapple, oragens, apples, bananas, strawberries and grapes in large bowl. Mix lemon pudding mixwith the reserved juice until pudding is dissolved. Pour over fruit mixture and stir to coat. Chill for one hour before serving.
