This Buffalo Chicken Dip Recipe Scores Big on Carolina A.M.!

This recipe found by our producer, Laura Pence, is great for parties, weekend snacking, and perfect for those big games!  You’ll score big with this one.

HERE’S WHAT YOU’LL NEED:::
— 2 cups cooked chicken, shredded
— 1 cup cauliflower rice
— 3/4 cup OR 6 ounces non-fat plain Greek yogurt
— 1 cup OR 8 OUNCES fat-free or low-fat sour cream
— 1/2 cup reduced fat cream cheese, softened
— 2 tablespoons scallions

FOR MIXING IN AND FOR GARNISH
— 1/4 cup hot sauce
— 1/4 cup OF EITHER blue cheese OR shredded Mexican cheese, WHICH IT WHAT WE’RE USING.
— 1/4 teaspoon garlic powder
— 1/4 teaspoon onion powder

Microwave your cauliflower rice with a little water to get it on the mushy side.  After that, mix everything together, and add it to a baking dish and bake for 15 minutes or put it in your crockpot!  Garnish as desired.  To keep it healthy, you can serve this with celery and carrot sticks or pretzels.  Multi-grain chips are a great option as well.
