The Ultimate Egg Sandwich from Johnny D’s…on Carolina A.M.!

It’s National Sandwich Day!  Chef Jamie Daskalis of Johnny D’s shares how to make the ultimate egg sandwich. You can try more of her recipes at any Johnny D’s locations (Surfside, North Myrtle and Myrtle Beach).

An Ultimate Egg Sandwich Recipe 
Serves 4 sandwiches

Here’s what you need:

Eggs, 4 large

Butter, unsalted, 2-3 tablespoons

Bacon, thick sliced, cooked, 4 to 8 slices

Croissants, 4 each

Avocado, large, 2

Salt and Pepper, to taste

Pepper jack cheese, shredded, as desired

Black Pepper, to taste to finish

Garlic Butter Tomato Sauce, see recipe

 

  1. Prepare the Garlic Butter Tomato Sauce and set aside and keep warm.
  2. Prepare a smashed avocado, by adding the avocado pulp to a small bowl with a touch of salt and pepper and mash to your desired consistency.
  3. Cook the bacon as needed or purchase cooked bacon to heat in oven as needed.
  4. Pre-heat an oven to 350 to toast the croissants.  Slice in half and place cut side down on sheet tray and toast in oven until a little crispy.
  5. Meanwhile, in an large nonstick pan, melt the butter over a medium heat.  Once the butter starts to simmer, crack the eggs in the pan one at time, allowing a few seconds between to allow the egg white to start to cook.  Use a spatula and carefully make sure the eggs are not stuck to the pan.  Shake the pan gently, periodically to keep the eggs moving.  We are looking for a sunny side up egg, which means the white is cooked thru but the yolk has not touched the hot pan directly leaving the yolk bright and “sunny.” Adjust heat as needed to ensure the white is getting cooked through without burning the butter and egg. When the eggs are almost finished, sprinkle your desired amount of pepper jack cheese over top to melt.
  6. To assemble sandwiches: Spread the desired amount of Garlic Butter Tomato Sauce on the bottom, place your bacon over the tomato sauce, top with the egg and cheese and add a little cracked black pepper then spread the desired amount of avocado to the top of the croissant, carefully close the sandwich.
  7. When you are ready to take your first bite, press down slightly to break the yolk and enjoy.

 

Garlic Butter Tomato Sauce

Here’s what you need:

Cherry tomatoes, 2 cups

Olive Oil, 1 tablespoon

Garlic, minced, 2 cloves

Balsamic vinegar, 2 tablespoons

Butter, unsalted, 1 tablespoon

Salt & pepper, to taste

 

  1. Place the tomatoes in a nonstick skillet over a medium heat with no oil in the pan.  Cook tossing gently, until the tomato starts to blister and you notice the skins are starting to look soft.
  2. Turn down the heat a bit and add the oil and garlic.  Be careful of any possible splatter and to not brown the garlic.
  3. Press the tomatoes gently with the back of a wooden spoon so they break open and release their juices. Add the balsamic and let the whole mixture reduce until its thickened a bit, about 5-7 minutes.
  4. Finish with the butter and salt and pepper to taste.
