Barefoot Bistro’s Shrimp Fettuccine Alfredo
Creamy Shrimp Pasta with Mushrooms
2 Tbsp Olive Oil
1 lb Shrimp
3 Garlic Cloves
1/3 tsp Dried Basil
1/4 tsp Paprika
1/4 tsp Salt
1/4 tsp Red Pepper Flakes
8 oz Mushrooms sliced thin
1 cup Half N Half
1/2 cup Parmesan cheese, shredded
1/2 cup Mozzarella cheese, shredded
Cook pasta. Drain and reserve some of the liquid.
Heat a large skillet and add olive oil. Immediately add garlic and shrimp. Cook on one side for one minute until pink on medium high heat. Flip shrimp and sprinkle with basil, paprika, red pepper and salt. Cook another one to two minutes and then remove.
Place mushrooms in the same skillet. Add more olive oil if necessary. Cook on medium high heat for about two minutes. Stir occasionally until mushrooms become soft. Sprinkle with a little salt. Add cooked shrimp and immediately add half n half. Bring to a boil and add cheese. Once it melts, remove from heat and add the noodles.
