Just Like Grandma’s Banana Bread
Makes 1 loaf
All-purpose flour 1 1/3 cups
Baking powder 2 teaspoons
Baking soda 1 teaspoon
Cinnamon 1/4 teaspoon
Cardamom 1/8 teaspoon
Nutmeg 1/8 teaspoon
Kosher salt 1/2 teaspoon
Sugar 1 1/4 cups
Eggs, large 2
Canola oil 1/3 cup
Water 1/3 cup
Vanilla extract 2 teaspoons
Bananas, ripe, mashed 2 medium size
- Preheat the oven to 350 degrees.
- In a small bowl, combine all the dry ingredients and whisk until combined.
- Add all the eggs, oil, water, and vanilla, and whisk gently until combined.
- Stir in mashed bananas. Mixing only until combined. Do not over mix.
- Lightly grease an 8 1/2-inch baking loaf pan and pour the batter into it.
- Place in the center of the oven for about 55–60 minutes until a toothpick inserted into the middle comes clean.
- Allow to cool for about 30 minutes before flipping over and removing from the pan. Allow to cool completely on a rack if you have one; otherwise transfer to a cutting board to cool.
Chef’s Tip: The riper the bananas the better tasting banana bread. So if you have bananas that you are about to throw out, they will be perfect for banana bread.
