Carolina AM Recipe: Raspberry Banana Oat Pancakes
Raspberry Banana Oat Pancakes
yields: 12 pancakes
All Purpose Flour 1 1/3 cups
Old-Fashioned Oats 3/4 cup
Sugar 1 tablespoon
Baking Powder 2 teaspoons
Cinnamon 1/2 teaspoon
Cardamom 1/4 teaspoon
Egg, large 1
Milk 2 % 1 1/3 cup
Vanilla Extract 1/2 teaspoon
Mashed Banana 1 cup
Avocado Oil 2 tablespoons
Avocado Oil as needed for cooking
Raspberry Jam as needed
Maple Syrup as needed
- In a large bowl, combine the flour, oats, sugar, baking powder, cinnamon & cardamom.
- In a small bowl, combine the egg, milk, vanilla, banana & oil; then stir into the dry ingredients just until combined.
- Heat a large non stick griddle over a medium heat. Drizzle a little oil and swirl around in the pan. Pour 1/4 cup of batter into the pan, being sure not to crowd the pan. About 2-3 cakes at a time. Cook until the batter starts to bubble and flip, then cook another 1-2 minutes until the batter is cooked all the way through.
- Serve in stacks of 2-3 layered with desired amount of raspberry jam, dusted with powered sugar and drizzled with maple syrup.
